A brilliant golden yellow robe, a round and powerful mouth with great length.<\/p>\n

  • Terroir:<\/em> Clay-limestone hillside<\/li>\n
  • Grape variety:<\/em> Chenin<\/li>\n
  • Winemaking:<\/em> This Chinon Blanc, my one-off 2015 vintage, was made from grapes grown on the renowned Croix Boiss\u00e9e hillside in the commune of Cravant-les-C\u00f4teaux. The grapes were hand-picked at their optimal ripeness, with Botrytis cinerea, a noble rot, present at 20%. Whole-cluster vertical pressing followed. After a light 24-hour settling, the must fermented without any additives in a raw concrete egg until spring 2016. A light filtration preceded bottling, which was carried out with a low germ rate and a residual sugar level of 5.8g\/l.<\/li>\n
  • Character :<\/em> A bright golden yellow dress with pale gold and honey highlights.
    \nThe nose is intense, elegant, complex and inviting. It opens with nuances of honey and fresh nuts, then evolves with notes of green fig, date and gingerbread, before lingering on spicy aromas of cinnamon and clove.
    \nThe palate is marked by its roundness and length. The initial sweetness is balanced by the roundness and a pleasing acidity. The finish underscores the overall balance with a sensation of warmth and vibrancy. The aromas of honey and figs perceived on the palate harmonize with the wine's overall balance.<\/li>\n<\/ul>\n

    Shellfish, a blanquette or sauerkraut will enhance this dish even more!<\/p>\n
